Ingredients:
- 2 bags (16 ounces each) of frozen dark sweet cherries, mixed berries, raspberries, strawberries or similar fruit
- 1/3 cup plus 1 TB of sugar
- 1/4 teaspoon of ground cinnamon
- 1 cup all purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup milk
- Ice cream for serving
Steps:
1. Combine the berries with 1/2 cup of sugar in a large skillet with a tight fitting lid. Bring to a boil over medium-high heat & simmer rapidly until the liquid is syrupy, 8-10 minutes.
2. Meanwhile, in a small bowl, combine the cinnamon and remaining tablespoon of sugar. In another bowl, stir together the flour, baking powder, and salt. Gradually stir the milk into the flour mixture and mix until a wet dough forms. Do not overmix -- it should be lumpy and not smooth.
3. Reduce heat to medium-low. Spoon tablespoons of dough over the simmering fruit in the skillet. Sprinkle cinnamon and sugar mixture directly onto the dough.
4. Cover the skillet and simmer gently until the dumplings are set and dry to the touch, 10-12 minutes. The dumplings will absorb the flavor of the cinnamon mixture and also the berries. Serve the dumplings warm with ice cream.
